Stained Glass Marshmallow Cookies

Stained Glass Marshmallow Cookies are a delight you sometimes see at holiday cookie swaps. This no-bake favorite is actually a candy but often called a cookie because of the shape. The color of these cookies adds nice variety to any plate of treats.

Ingredients:
½ cup butter (1 stick)
2 cups (12 ounce bag)
1 teaspoon vanilla extract
1 bag colored mini marshmallows (10.5 ounces)
¾ cup crushed cookie crumbs (optional)

Directions:

  1. In a large bowl, place butter and chocolate chips. Microwave for 45 seconds and stir. Return to the microwave and add 20 seconds as needed until the chocolate melts and the mixture is smooth. Stir in vanilla and let cool for a few minutes.
  2. When the mixture has cooled slightly, fold in the marshmallows and stir to coat the marshmallows completely with chocolate.
  3. Lay out a sheet of parchment or wax paper about 2 feet long and sprinkle a line down the middle with cookie crumbs about 4-5 inches across. Onto the crumbs, spoon the marshmallow mixture and form into a log. Sprinkle the top with more cookie crumbs and roll tightly, securing both ends of the “log.”
  4. Refrigerate until set, at least 2 hours. Cut into 1/3 inch slices and store in the refrigerator in an airtight container.
